Ingredients: 2 (300 g) containers of cottage cheese 5 tablespoons honey (or to taste) 3 tablespoons cacao powder (unsweetened) 1/2 jar smooth peanut butter (or more if you like the taste) 100 g pistachios  roughly chopped) 100 g pomegranate seeds Optional: 50 g dark chocolate, melted (for drizzling) Optional: sea salt  Method: In a blender or food processor, combine the cottage cheese, honey, cacao powder, and peanut butter. Blend until smooth and creamy. Pour the mixture onto a baking tray, lined with parchment paper  and spread it evenly using a spatula or spoon into a rectangular shape, about 1 cm thick. Sprinkle the chopped pistachios and pomegranate seeds evenly over the cottage cheese layer. For an extra chocolatey touch, drizzle melted dark chocolate over the top. You can also add a tiny amount of salt for balancing the sweetness of the bark Place the baking sheet in the freezer for about 3 hours or until the mixture is firm. Once frozen, remove the bark from the freezer and break or cut it into 16 pieces.     Storage Tips:Store any leftover bark in a sealed freezer bag or airtight container in the freezer for up to 3 months.
