Ingredients:For the salad: 250g broccoli  1 red pepper, sliced into thin matchsticks 1 1/2 medium carrots, grated 2 chicken breast For the yoghurt dressing: 4 tbsp Greek yoghurt 1 tsp mustard 1/2 clove garlic, crushed or grated 1 tsp dried dill  Salt, to taste To finish: 2 tbsp olive oil A small handful of roughly chopped walnuts Method: Season the chicken breast with salt, pepper, and a little olive oil. Grill on medium heat for about 5-6 minutes per side, then slice or chop. Steam the broccoli for 5 minutes and then cool it in ice water. In the meantime, chop the red pepper and carrots  In a small bowl, mix together Greek yoghurt, mustard, dill, crushed garlic, and salt. In a large bowl, toss the broccoli, carrots, and red pepper together. Add the grilled chicken and yoghurt dressing. Drizzle with olive oil and sprinkle with roughly chopped walnuts.
