Ingredients: 1 pack (250g) pre-cooked quinoa or mixed grains 1 ripe avocado, sliced 1 large orange, peeled and segmented  30g roasted pumpkin seeds 20g chopped walnuts 1 tbsp flaxseeds 1 red onion 150ml white wine vinegar 1 tbsp sugar 2 large handfuls of rocket Beetroot hummus – 1 heaped tbsp per portion (store-bought) or swap it with normal hummus Optional topping: pomegranate and feta Orange ginger dressing: Juice of 1 medium orange 1 tbsp extra virgin olive oil 1 tsp freshly grated ginger 1 tsp maple syrup or honey 1 tsp apple cider vinegar Pinch of salt and black pepper Method: Slice the red onion.
