Fig & Date Energy Bites A naturally sweet and nourishing snack, these energy bites are perfect for a mid-morning pick-me-up or post-workout boost. They take just 15 minutes to prepare and can be stored for weeks, making them a convenient option to have on hand. Ingredients: 150 g hazelnuts 150 g cashews 80 g dried figs, stems removed 80 g medjool dates, pitted 40 g shredded coconut 1 ½ tsp vanilla extract (or seeds of 1 vanilla pod) ¼ tsp sea salt Optional: 2 tbsp cacao powder or cacao nibs Method: Add the hazelnuts and cashews to a food processor and pulse until the nuts are pea-sized. Add the figs, dates, and shredded coconut, then blend until the mixture is sticky and broken down, about 1–2 minutes. Add the vanilla extract, sea salt, and cacao (if using). Continue blending for 3–5 minutes, scraping down the sides as needed, until the mixture comes together into one sticky ball. Roll into golf sized balls and store in the fridge for up to 2 weeks or freeze for several months.
